Classic Champagne Cocktail

The combination of botanical bitters, champagne, sugar, and tart lemon is both unexpected and refreshing. Need:

Sugar cubes
Bitters (we recommend Angostura or Peychaud's)
Champagne or other sparkling wine (find out how to pick out the perfect champagne here)
Twist of lemon peel

Place a sugar cube in a chilled champagne flute. Add 2 or 3 dashes of bitters, then fill the flute with champagne or sparkling wine. Squeeze the lemon peel over the cocktail, garnish with the lemon twist, and serve.
